I ticked off another item from my poster of Cajun food art that I’d like to one day make– beignets! Already had the coffee with chicory, so I was able to give myself a bit of an at-home Café du Monde experience, while the snowstorm raged on outside.

Had the last of the gumbo for breakfast, and then lunch. Even without using as much chicken as the recipe called for, I still had enough that I got 5 meals out of it. Plus, I gave some to my neighbor and my parents. I think my parents said they didn’t even finish all of what I gave them in one meal. So it stretched to more than the suggested 8 servings.

Heard from a friend and former coworker today. She told me about an upcoming writing contest. We shall see. I would need some inspiration. It’s supposed to be historical micro fiction set in my area, or else set in the home country of someone who eventually migrates into this area.

I was considering talking to my family for inspiration. It doesn’t have to be set very far back into the past, I don’t think, though they said before cell phones and Starbucks and IKEA.

We’ll see. I could also suit up and boot up and go for a trudge through the snow. It might be wise to brush some of the snow off the car again before morning anyway, so it’s not so bad when I have to move it for the snow plow to come through.

Waiting to hear the results of my mom’s latest lab tests from the doctor. Shouldn’t be anything serious, but she also went to get the results in person in spite of the weather. So I also want to make sure she gets back okay.
