As I may have mentioned, I have really been struggling at home. Care tasks, cooking, etc., all very difficult of late. I HAD been strictly microwaving my breakfasts– lots of egg, sausage, and cheese sandwiches from the freezer aisle. The biscuit ones I sometimes dressed up with a bit of sausage gravy, just to add a little je ne sais quoi.

Whatever the reason, I recently decided to switch up my morning routine and endeavor healthier eating, starting with breakfast.

I discovered a night or two ago that I had still been using too big a portion to really cut calories and carbs over the breakfast sandwiches, but I have since adjusted.

Since I’m a bit peppier at night than I am in the morning, I decided to start making overnight oats. I found a good basic recipe. One part oats to one part milk (I use oat milk), with half as much plain Greek yogurt, and some Chia seeds.

I’m now using half a cup of old fashioned rolled oats, and so on, adding a touch of peanut butter for more protein, or sometimes fresh fruit or keto grain free granola for crunch.

Right now, I’m snacking on some Jicama with Tajin seasoning.

I also went to the grocery store today, where I received two compliments on my denim jacket. It’s got the design from a Blondie graphic tee stitched on the back, and pins all over the shoulders.

Picked up fixins for pizza zucchini boats, since I have been DESPERATE for pizza-baked spaghetti after seeing it was back at Fazoli’s. I’m hoping this will be almost as good? Not sure if I will be up to making up the pizza boats tonight, but I have burger patties and keto buns to fall back on, if needed. And lots of veggies.

SO… your girl is trying like hell to get healthier again. One step at a time.
