What’s the most delicious thing I’ve ever eaten? How about the most delicious thing I’ve ever cooked, instead. After all, I ate it, too.

I try to make something Cajun or Creole every year around Mardi Gras. Last year, I think I made gumbo from a recipe in the True Blood cookbook, and beignets from a Cafe du Monde mix. Still have to try more things from the cookbook. The gumbo was great!

In years past, I’ve made my favorite. It’s expensive and time consuming but very, very delicious. And the first pic I found of it (of my cooking) was on a paper plate LOL… so it didn’t come out looking gourmet. BUT…

Shrimp Étouffée and Red Beans and Rice!!!

One VERY over the top year when I was preparing it at my parents’ house, I even made chocolate mousse to go with it, for dessert. Making peaks with whipping cream is HARD work, yo! Worth it, but hard.

Now, the chocolate mousse pic below is NOT mine, but it’s giving me ideas! I bet it would taste great garnished with pomegranate, as this one seems to be.

Not sure if I still have the recipe I used that time, but I bet I could find one easily. The cookbook I got the Étouffée recipe from might even have one? If not, there’s always the internet! Bon Appetit!
